Why do tomatoes crack open?

There are two primary reasons why tomatoes crack open when cooking. One is dryness. When the tomato reaches a certain temperature, the sugars inside begin to turn to a gummy, sticky paste. This gummy paste can create pressure in the tomato, making it easier for the skin to burst and leak out. To prevent this, always add water. Water helps the tomato stay firm while it cooks.
